Apple Cranberry Crumb Bars with Chef Dru Tevis of Nage & Root Gourmet

Recipe

Fruit Filling:

  • 3 cups dried apples, chopped

  • 1 1/2 cups dried cranberries

  • 2 cups Apple cider or white cranberry juice

  • 1 cup port

  • 1/3 cup light brown sugar

  • 1 1/2 teaspoons cinnamon

For Base & Topping:

  • 1 3/4 cups butter (softened)

  • 1/4 cup brown butter (melted)

  • 1 1/2 cups light brown sugar

  • 1 teaspoon cinnamon

  • 4 cups rolled oats

  • 3 cups all purpose flour

  • 1 teaspoon baking soda

  • 1 teaspoon salt

 Simmer apples, cranberries, cider, port and light brown sugar until most of liquid is cooked off. Combine oats, flour, brown sugar, salt, light brown sugar and cinnamon. Stir in brown butter and cut in cold butter until you have a coarse meal. Press roughly 3/4 of dough into sprayed half sheet tray. Spread fruit mixture over top. Crumble remaining dough over top fruit mixture and press down. Bake at 315 degrees for 30 minutes.
